Wild Arrow Squid (Calamari-raw) is a great choice even when fresh is available.
Freezing and thawing help break down some of the tough muscle fibers making the squid more tender. Perfect for Calamari. 

Squid have a dense flesh that turns white when cooked. Beautiful baked, barbequed, fried or as sushi/raw. Very fast growing, arrow squid have a short life cycle and are abundant in the sub-Antarctic waters, 300 to 500 metres deep. They live near the seabed during the day and come up near the surface at night.
