A premium New Zealand species. Firm sashimi grade flesh, white in colour, high in fat & reasonably thick. Suitable for most cooking methods.
White Warehou (Trevella) is a closely related species to Silver Warehou but is found in deeper waters.
White Warehou is uniformly greyish white, has no apparent scales or pits, no pectoral blotch, and has a relatively larger eye.
The flesh is white and firm. Please be careful for bones.
Flavour and cooking
White Warehou have a firm, white flesh fish. The fillets are reasonably thick and suitable for most cooking methods including baked, fried, grilled, steamed and poached.
Commonly found off south east New Zealand and on the Campbell Plateau at depths between 400 and 600 metres.
Sustainability
White Warehou is managed by the Ministry for Primary Industries using the New Zealand Quota Management System (QMS). Regular stock assessments are conducted to estimate fishery stock size and numbers. Scientific studies are also used. From these, scientists can estimate future stock sizes and catch limits.
